Cook a Vegan Indian Meal in Minutes!

​After a long hard day at work, it's tough to come home and a cook a delicious meal for the family. You are stressed from work, tired from battling the traffic home and ready to relax. How do you make a fast healthy meal for your family that is both satisfying and tasty? 

Indian meals tend to be high in taste but also high in effort. We have the perfect recipe that will require minimal time with nutritious tasty results! In less then twenty minutes with our recipe you will be able to make a traditional Indian dish called "Kitchiri" which is a rice based dish with lentils and spices.

Ingredients 

2.5 Cups of Water
1 cup of Short Grain Rice 
1/2 Cup of Lentils (Yellow or Red) 
1.5 Teaspoon of Salt (or as desired)  
1/2 Teaspoon of Red or Black Pepper
1/2 Teaspoon of Turmeric
1/2 Teaspoon of Minced Garlic
1/2 Teaspoon of Minced Ginger 
2 Tablespoons of Finely Chopped Onions 
1/4 Cup of Tomato Sauce
1/2 Teaspoon of Cumin Seeds
1 Tablespoon of Oil or Butter 

3 Teaspoons of Finely Minced Cilantro

1 Pressure Cooker 
1 Sauce Pan

Step 1 - Wash the Rice & Lentils (2 Min)

Wash Rice and Lentils under cold water thoroughly to release dirt and surface starches, you can use a bowl or a Wash Rice Basket.  Wash the mixture until the water turns clear after rinsing. If you rinse rice very well, the cooked rice will have a reduced likelihood of clumping together.

Step 2 - Cook Ingredients in Pressure Cooker (11 Min) 

Add Rice, Lentils, Salt, Pepper, Garlic, Ginger, Onions, Turmeric and Tomato Sauce to Pressure Cooker with 2.5 Cups of Water. 

Cover the pressure cooker and cook the ingredients until it boils, which tends to be the first whistle from the Pressure Cooker. This process normally takes approximately 10 minutes. ​

Once the mixture has boiled t
urn off the stove and let it sit for 5 minutes.

Step 3: Sauté & Mix (5 Min) 

While your rice mixture is still cooking, add Cumin Seeds and Oil into a Saucepan and cook on Medium Heat. Sauté until the Cumin Seeds turn reddish.

Once your rice mixture is ready add it to the the saucepan and mix, let it cook for two minutes on Medium Heat.

Step 4: Add Garnish & Serve (2 Min) 

Once your meal is cooked, transfer the contents of the Saucepan to a casserole and add cilantro as a garnish.

VOILA! You have made a healthy, nutritious and delicious Vegan meal for your family in 20 Minutes or less! Now pat yourself on the back and enjoy your meal in peace!
