Science Meets Delicious in San Diego

Zymology 21 is a new, family owned restaurant-bar in San Diego which serves a unique combination of science and gastronomy.
The hottest item on the menu is definitely the Shrub Flight – 5 Test Tubes with in-house fermented shrubs and alcohol of your choice.
The Shrubs are seasonal so expect different flavors throughout the year. We enjoyed a mix of Strawberry, Ginger Lime, Pineapple Vanilla, Blueberry Basil and Stone Fruit Habanero coupled with vodka. If you’re into different type of sprits the place offers plenty of options to mix including gin, whiskey, mojito, margarita and mimosa. Those of you under 21 (and without fake ID ;) ) can still enjoy the shrub flight with a non-alcoholic ginger beer.
Our bartender is mixing fire with dry ice to create a stunning effect and our exquisite Vodka cocktails:
Beer lovers can indulge on variety of Californian beers, 90% of which made in San Diego area.
Zymology 21 certainly has a lot more to offer besides drinks. The restaurant’s chef Leyla Javadov has created an inspired menu of farm to table dishes. The produce is grown locally in the San Diego, guaranteeing a fresh supply.
We had 3 main dishes:
- Chicken and Waffle: free range chicken breast served on top of a cheddar herb waffle, with a side of egg and green salad
- Salmon Hay Hash: house cured beet Salmon salad. The salmon is similar to a smoked salmon, only it’s cured in-house with beet pulps, salt and spices
- Green Eggs and Grilled Lamb: small lamb-chops, hormone-free, with poached egg and hollandaise sauce
